Fluffy Classic Pancakes 

The foundation of any great pancake stack is light, tender and just the right balance of crisp edges and fluffy centres. 

Ingredients 

  • 180g plain flour 
  • 2 tbsp caster sugar 
  • 1 tbsp baking powder 
  • 1/2 tsp salt 
  • 300ml extra creamy oat drink 
  • 1 large egg 
  • 2 tbsp melted butter 
  • 1 tsp vanilla extract 

Method 

  1. Whisk together the flour, sugar, baking powder, and salt. 
  2. In a separate bowl, combine oat milk, egg, butter and vanilla. 
  3. Pour the wet ingredients into the dry, stirring until just combined (a few lumps are fine). 
  4. Heat a lightly greased pan over a medium heat and ladle in the batter. 
  5. Cook for 2-3 minutes until bubbles appear, then flip and cook for another minute. 
  6. Serve warm with golden syrup, fresh berries, or a drizzle of honey. 

Banana & Oat Pancakes 

A heartier pancake with natural sweetness and a slightly chewy texture from blended oats. 

Ingredients 

  • 100g oats 
  • 120g wholemeal four 
  • 1 tbsp baking powder 
  • 1/2 tbsp cinnamon 
  • Pinch of salt 
  • 1 ripe banana, mashed 
  • 300ml of extra creamy oat drink 
  • 1 large egg 
  • 1 tsp vanilla extra 
  • 2 tbsp of maple syrup 

Method 

  1. Blend oats into a fine flour or leave them for a whole texture. 
  2. Mix dry ingredients, then combine with banana, oat milk, egg, vanilla, and maple syrup. 
  3. Cook on a lightly greased pan over medium-low heat for 2-3 minutes per side. 
  4. Serve with nut butter, caramelised banana, or a spoonful of yoghurt. 

Chocolate Chip Pancakes with Oat Milk 

A rich, indulgent take on oat milk pancakes 

Ingredients 

  • 180g plain flour 
  • 2 tbsp cocoa powder (optional) 
  • 1 tbsp soft brown sugar 
  • 1 tbsp baking powder 
  • 1/2 tsp salt 
  • 300ml of extra creamy oat drink 
  • 1 large egg 
  • 2 tbsp melted coconut oil or butter 
  • 1 tsp vanilla extract 
  • 75g dark chocolate chips 

Method 

  1. Combine flour, cocoa powder, sugar, baking powder, and salt. 
  2. Mix oat milk, egg, melted oil or butter, and vanilla in a separate bowl. 
  3. Stir wet ingredients into dry, then fold in chocolate chips. 
  4. Cook on a greased pan for 2-3 minutes per side. 
  5. Serve with maple syrup, melted chocolate or berries.Â
