Wet Ingredients
- 250g oat milk
- 150g sugar
- 50g vegan butter
Dry ingredients
- 200g plain flour
- 100g almond flour
- 16g baking powder
- 6g cinnamon
- 1 pinch of salt
- 3-4 apples
Method
- Grease the sides of your baking tray with vegan butter and dust them with flour. Line the bottom with parchment paper.
- Pre-heat the oven to 180°C/ 160 Fan °C
- To a medium bowl, add the wet ingredients and then sift in the dry ingredients.
- Whisk the wet and dry ingredients together for a few seconds till you have a smooth and thick cake batter.
- Add small apple pieces from 2 apples, the apples should be peeled, cored and the seeds removed.
- Fold in with a spatula until the apple pieces are well combined into the batter, then pour it into the cake tin.
- Cover the top of the cake with 2 more apples into thin slices. Finally, sprinkle the apples with sugar.
- Bake the cake for 55 minutes to an hour on the centre rack of the oven. Keep a check on it to prevent the sugar on top from burning.
- Take it out of the oven, let it cool and enjoy!
